Coho Pizza Co Opens in Glide
4:40 PM · Jul 21, 2023After nearly a year of dedication and hard work, the former laundromat in Old Town, Glide has been transformed into Coho Pizza Co. Misty Russell, along with her husband, three sons, and Arrow Excavation + Concrete, poured their passion into the revamp, originally intending only to refurbish the property. With a history of owning the stretch of land for 13 years, the Russells initially contemplated finding a new tenant or converting the space into a commercial kitchen. The family had recently moved on from their prior venture, Brix Grill, a beloved full-scale restaurant in Downtown Roseburg they had grown for nearly two decades. While they desired a change from such an expansive project, Misty Russell wasn't ready to step away from the food industry entirely. Discussing potential ideas with local co-workers, the concept of a pizzeria emerged, leveraging their combined culinary prowess and avoiding direct competition with existing local restaurants. The managers, Lora Jo Stonesifer and Britanie Wade, with their extensive experience in service, became integral to this vision. Despite being newcomers to the pizza scene, the Coho Pizza Co team eagerly took to learning the craft. Their debut pizza product, a tavern-style thin crust offering a light crisp bread bite, has been well-received. The menu includes both unique Coho Creative flavors and classic choices, alongside Misty's signature appetizers, salads, soups, and a limited bar with draft beers and local wines. Opened on July 3rd, Coho Pizza Co was met with an outpouring of love and support from residents all over the county. Their operating hours are Monday to Saturday, 11 am to 8 pm, and Sundays, 11 am to 4 pm, with specified closures for Thanksgiving, Christmas, and staff training. The 72-seater restaurant, with indoor and outdoor spaces, plans to overhaul its yard area during the off-season to provide additional seating and game facilities. Misty Russell's enthusiasm is palpable as she shares, "It's so good to see the wonderful folks I've served for years!"
