Lilly's Mexican Cuisine Opens in Roseburg

Lilly’s opened last week near the corner of Stewart Parkway and Edenbower Boulevard with a unique business model. Customers order at a food truck and eat in a dining area inside a former mini mart. The system gives customers comfort and familiarity and the business flexibility to grow. Lilly’s is a food truck and sit-down restaurant in one, serving tacos and burritos, tostadas and enchiladas. They also offer some American food like burgers and fries. Owner Lilly Vazquez said they wanted to have a more traditional restaurant where customers would order their food inside, but the current model works and is fixed in place. "We have a food truck outside and they can order outside at the food truck and they can come in and sit down and dine in," Vazquez said. "My idea from the beginning was to have a point of sale inside the building and we would make the food in the food truck. It didn't work that way. Hopefully down the road we can work something out." The restaurant is open at 2980 NW Stewart Parkway, Monday through Saturday, 10 a.m. to 8 p.m. Vazquez has plans to open another location in Winston someday. Vazquez has lived in Roseburg since 2020 and has taken her passion, skills, and life experience from growing up in Mexico to make her vision a reality. She was born in Wyoming, raised in Mexico, and spent over a decade catering. "I was in the catering business for over 16 years," Vazquez said. "I have always had a passion for cooking since I was young. I went to culinary school, but it was not for Mexican food. I wanted a little taste of different things like we have in Mexico." Her team starts arriving around 6 a.m. to prepare the food. The meat marinates for a minimum of 24 hours before it goes onto the grill for flavorful fajitas. "We cook everything from scratch on a daily basis," Vazquez said. "The more you marinate it the better taste and flavors you will get. We love to cook and we love to cater to our customers. We are modern Mexican cuisine but we are still from scratch."
